Ingredients:

  • 4 salmon fillets (about 170 grams each)
  • ½ Cup prepared pesto
  • 1 onion, finely chopped
  • 1 Punett of grape tomatoes, halved
  • 125 grams of crumbled feta cheese

Steps:

  1. Prepare the Campfire or Grill: Get your campfire or portable grill going with a medium heat. If using a campfire, ensure you have a flat grill plate or mesh to place over the flames.
  2. Assemble the Parcels: Lay each salmon fillet on an individual piece of foil. Generously spread about 30 ml of pesto on each fillet. Evenly sprinkle the chopped onion over the fillets, followed by the grape tomatoes. Finish by sprinkling approximately 30 ml of feta cheese over each piece.
  3. Seal: Fold the foil over each salmon fillet, ensuring you pinch the edges tightly to create a sealed parcel.
  4. Cooking: Place the foil parcels on the grill plate or directly on the portable grill, ensuring they're not directly over large flames to prevent burning. Cook for 7-10 minutes on each side. The salmon should flake easily with a fork when done.

Tips:

  • Adjusting Heat: If you notice your parcels cooking too quickly or getting too dark on the bottom, move them to a cooler section of the grill or elevate them slightly from the direct heat.
