Ingredients:

  • 1 ¼ teaspoons baking powder

  • ¼ teaspoon salt
  • 1 large egg
  • 375 ml (1 ½ cups) buttermilk
  • About 45 ml (3 tablespoons) melted butter or margarine, plus extra for cooking
  • 2 ripe bananas, peeled and thinly sliced
  • 60 ml (¼ cup) macadamia nuts, chopped (optional for garnish)

Steps:

  1. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole-wheat flour, baking powder, baking soda, sugar, and salt.
  2. Combine Wet Ingredients: In a separate bowl, beat the egg lightly and mix in the buttermilk and melted butter. Pour this mixture into the dry ingredients, stirring just until the batter is evenly moistened.
  3. Prepare the Griddle: Heat a lightly buttered griddle or a 25-30 cm (10-12 inch) nonstick frying pan over medium heat. The griddle is ready when a drop of water sizzles upon contact.
  4. Cook the Pancakes: For each pancake, ladle about 60 ml (¼ cup) of batter onto the griddle. Delicately place 3-5 banana slices on top of the batter. Flip carefully and cook until browned on the bottom, another 3-4 minutes.
