Coastal Eclair Delight

 

G'day, campers! Fancy a sweet treat that'll transport you straight to Australia's stunning coastlines? Dive into this delightful twist on the classic eclair, capturing the spirit of sun, sand, and surf!

Ingredients:

  • A trusty roasting stick (or find a fallen branch around the campsite)
  • Aluminium foil
  • Butter or non-stick spray
  • 1 batch of crescent roll dough (see below for our Coastal Crescent recipe, you can also make this before hand at home)
  • 1 small container of prepared vanilla pudding (made beforehand and kept in a cooler)
  • 1 jar of Nutella or chocolate frosting
  • Coastal Crescent Roll Dough:
  • 1 1/2 cups self-raising flour
  • 1 tbsp sugar
  • 30g butter, chilled and cubed
  • 2/3 cup milk

Instructions:

  1. Preparation at Home: Using our Coastal Crescent recipe, blend the flour and sugar, then incorporate the butter until you have a breadcrumb-like texture. Gradually pour in the milk and mix until the dough forms. Roll out and shape into triangles. Remember to whip up your vanilla pudding and store it for your journey!
  2. Beachside Setup: Once your campfire is gently crackling away and you're surrounded by the calming sound of waves, get that roasting stick sorted. Wrap its tip with foil and lather with butter or a non-stick spray.
  3. Roll with the Waves: Take your triangle dough, and wrap it around the stick ensuring it's snug, and that the end is sealed.
  4. Golden Horizon Roast: Slowly roast over the campfire, rotating steadily. Aim for a golden hue, reminiscent of the Aussie sunset by the beach.
  5. Sandy Filling and Surfing Top: After roasting, slide it off, and cascade it with the creamy vanilla pudding. Top it with a luscious layer of Nutella or chocolate frosting.

Notes:

  • Scouting for that perfect roasting stick? The coastal forests offer plenty. Find a sturdy fallen branch or bring a dowel from home. You'll want something about ¾ to 1 inch in thickness.
