Outback Garlic Butter Steak and Spud Parcels

 

Enjoy the essence of the Australian outdoors with these tasty steak and spud parcels. Combining the richness of sirloin steak with baby potatoes, this dish is both hearty and flavourful. Perfect for throwing on the campfire grill after a day of adventure!

Ingredients:

  • 680 grams of sirloin steak (other good cuts include ribeye or porterhouse)
  • 450 grams of baby potatoes (quartered or halved to about 1.5 cm pieces)
  • 1 onion (halved and then thinly sliced)
  • 15 ml olive oil
  • 30 ml chopped fresh parsley
  • 15 ml minced garlic (adjust based on preference)
  • 15 ml mixed herbs (a blend similar to Italian seasoning)
  • Salt and pepper (to taste)
  • 30 grams of butter (cubed)


Preparation Time & Cooking Time:

Prep Time: 15 minutes
Cook Time: 20-25 minutes on the grill/fire or 25-30 minutes in the oven.

Steps:

  1. Prep the Steak: Cut the steak into desired sizes based on your preferred doneness (6-8 cm for well done, 7.5-10 cm for medium, 12.5 cm for rare). If you like, marinate it for enhanced flavour.
  2. Mix Ingredients: In a large mixing bowl, combine steak, potatoes, onion, olive oil, parsley, garlic, mixed herbs, salt, and pepper. Toss them together ensuring everything is well coated.
  3. Assemble the Parcels: Layout 4 aluminium foil pieces, each around 30x30 cm. Evenly distribute the steak-potato mix in the centre of each foil. Place butter cubes on top. Fold and seal the foil tightly.
  4. Cooking on Campfire Grill: Place the parcels on a preheated grill and cook for 10-12 minutes each side, ensuring the potatoes become tender.
  5. Oven Method: If using an oven, preheat it to 220°C. Place the parcels and bake for 25-30 minutes. To get a char on your steaks, open the parcels and broil for an additional 3-4 minutes.
  6. Serving: Open the parcels carefully, watch out for the steam! Serve hot and enjoy the flavours of the outback.

Tips:

  • Flavour Boost: For a more intense garlic hit, consider doubling the garlic.
  • No Need to Peel: Baby potatoes are great as they don't need peeling. Just ensure they're cut to the recommended size.
  • Veggie Add-ins: Feel like adding more green? Toss in some capsicum, asparagus, or green beans.
  • Potato Check: If the steak is done but the potatoes aren't, remove the steak and let the potatoes continue to cook. If you're worried about cooking times, parboil the baby potatoes for 5 minutes before adding them to the mix.
  • Prep Ahead: These parcels can be prepped a few hours before cooking – perfect for packing in your cooler before heading to the campsite.
