Embrace the fusion of Italian and Tex-Mex cuisines with these Campfire Pizza Nachos, a creative and mouthwatering dish perfect for your next outdoor adventure. This recipe combines the crispy goodness of tortilla chips with classic pizza toppings and a creamy garlic sauce, all cooked over the warmth of a campfire. It’s an ideal shareable meal for enjoying with friends and family under the stars.

Ingredients:

  • 2 cups pepperoni, cut into quarters
  • ½ bell pepper, diced
  • 2 garlic cloves, minced
  • 2 green onions, sliced
  • ¼ cup onion, diced
  • ½ cup black olives, sliced
  • 1 bag tortilla chips
  • 1½ cups Colby-Jack cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • ½ cup garlic cream sauce (prepare using minced garlic, heavy cream, and a touch of Parmesan for flavor)
  • For the Garlic Cream Sauce:
    • ½ cup heavy cream
    • ¼ cup milk
    • ½ tbsp olive oil
    • 1½ tbsp unsalted butter
  • Seasonings: Salt, pepper, and red pepper flakes to taste

Instructions:

  1. Prepare the Garlic Cream Sauce: In a small saucepan or skillet over the campfire, heat the olive oil and butter. Add minced garlic and sauté until fragrant. Stir in heavy cream and milk, bringing to a low simmer. Add a sprinkle of Parmesan cheese, salt, and pepper. Cook until the sauce thickens slightly. Set aside.

  2. Prep the Veggies: Dice the bell pepper and onion, slice the green onions and black olives, and mince the garlic if not already done for the sauce.

  3. Assemble the Nachos: On a large piece of heavy-duty foil, spread out a layer of tortilla chips. Drizzle some garlic cream sauce over the chips. Evenly distribute the pepperoni, bell pepper, onion, black olives, and half of the green onions over the chips. Cover with Colby-Jack cheese and a sprinkle of Parmesan.

  4. Cooking: Place the foil pack on a grill grate over the campfire or directly on low coals, careful not to let flames touch the foil. Cook until the cheese is melted and bubbly, about 10-15 minutes. Keep an eye on it to prevent burning.

  5. Final Touches: Once cooked, carefully remove from the heat. Garnish with the remaining green onions and a sprinkle of red pepper flakes for extra heat if desired.

Tips:

  • Customization: Feel free to add or substitute toppings based on your preferences. Mushrooms, cooked sausage, or diced tomatoes make great additions.
  • Serving Suggestion: Serve hot directly from the foil for an easy cleanup. This dish pairs wonderfully with a side of sour cream or extra garlic cream sauce for dipping.
  • Safety: Use gloves or tongs when handling the hot foil pack from the campfire.

Campfire Pizza Nachos are a fun and flavorful twist on traditional nachos, offering a unique blend of tastes that’s sure to delight. Enjoy the communal pleasure of digging into this cheesy, savory treat on your next camping trip.
